Description
Easy and quick to make, this frozen yogurt bark recipe is one of the best healthy snacks. Topped with fresh berries and crunchy gluten free granola.
Ingredients
2 cups Greek Yogurt (I make homemade thick, creamy greek yogurt)
2/3 cups Paleo Granola (I use Paleonola Vanilla Bean)
1/2 cup of Pure Honey, optional if you use sweetened greek yogurt
1 tsp Pure Vanilla Extract, no sugar added and optional if you use a flavored yogurt
1/3 cup Dark Chocolate Chips (I use the Hu brand, or Human with no added sugar)
Instructions
Line a ¼ sheet pan entirely with parchment paper to prevent sticking.
In a medium mixing bowl, add the greek yogurt. If you’re using plaid greek yogurt, like i do, then mix in the honey and the pure vanilla extract. You don’t have to use as much honey as I do, it’s pretty sweet and my homemade yogurt is packed with probiotics. The probiotics make the flavor more tart.Â
Pour the mixture onto the sheet pan and spread it evenly.
Place your berries around the top, I use them sparingly because although they are beautiful in color, they can be tart.Â
Sprinkle on the granola, I love to cover every square inch.
Sprinkle on the dark chocolate chips.Â
Place in the freezer for 4-8 hours. Once it is fully frozen, remove it from the freezer and cut it quickly into pieces with a sharp knife. It will melt quickly, so get it back in the freezer as soon as you can.Â
You can store this yogurt bark recipe in your freezer, in an airtight container for up to 2 weeks. Be sure to place parchment paper between each piece to prevent sticking.Â
