I felt inspired to make this Peanut Butter Chocolate Chip Cookie recipe because I have another Peanut Butter Cookie recipe that is good but not very sweet.
Quick tip, don’t serve my other recipe to guests that eat a lot of sugar cause they may make a goofy face at you as they try to tell you it’s good like a regular cookie.
I live in the Midwest, so polite is the rule no matter what.
So, I decided to make another version of that wonderfully healthy cookie, which is amazing for an anti-inflammatory diet due to its low sugar content…by the way.
This peanut butter cookie version has more honey, and I added a fantastic dark chocolate chip from a company called Human. Target has it! Yay! It’s sweetened solely with dates, no added sugar at all.
It tastes fantastic. I had my husband do a taste test between the Hu (Human) dark chocolate chip and Tollhouse and he said the Hu dark chocolate chip tasted great! Yes he did!
And he’s right, it is great! Tastes just like a wonderful chocolate baking chip. The dates give it a sweetness that is perfect, absolutely perfect. Try these for yourself. I can’t recommend them enough.
Sometimes I just eat some in my hand with plain roasted peanuts. I’m a nut! No pun intended.
The only thing about adding ooey, gooey, chocolate chips to a peanut butter cookie is that it makes it more challenging to add the fork marks. You’ve gotta have the fork marks on a peanut butter cookie. That’s how it’s done and I won’t break tradition.

How to Make these Peanut Butter Chocolate Chip Cookies
Ingredients
Almond Flour is a wonderful gluten free baking flour, however it is a nut. What I mean by calling it out like that is..it’s ground nuts. Don’t get me wrong, I love baking with almond flour but it is very dense and can impart more of a flavor to recipes than traditional flour. It’s also more wet in content.
Coconut Flour is my absolute favorite gluten free flour. Some people don’t prefer this flour, but I love it because the flavor is more neutral. It’s also a more dry flour, so it seems to balance out some of the wetness and heaviness of the almond flour.
Baking Soda because it’s good for some leavening and won’t irritate your gut lining like baking powder.
Sea Salt gives a nice flavor to the cookies. This is optional especially if the peanut butter you’re using is salty.
Peanut Butter with only peanut butter and maybe oil and salt added, I use Target’s brand with no added sugar.
Butter that has been softened. I prefer to take some out of my fridge and leave it out until it becomes soft naturally. I always over soften it in the microwave, and it shouldn’t be hot or melty.
Pure Honey with no other ingredients.
Egg that is free range.
Pure Vanilla Extract to add a smooth velvety flavor.
Directions
First, blend the dry ingredients together in a medium sized mixing bowl. If you want you can put the flours through a flour sifter to blend them well and refine the texture.
Next, cream the peanut butter and softened butter together. Then mix in the honey.
Beat the egg in a small bowl then blend it into the flour mixture.
Add the wet ingredients, the peanut butter mix, and combine well.
The result should look and feel like a cookie dough, not too dry though. Dry enough to ball some up in your hand without it sticking.
Add the chocolate chips and mix into the dough. The dough will turn into one large ball in your mixing bowl. That’s how you’ll know it’s ready to go into the oven.
Recipe Variations
You could add nuts to this recipe, or use another sweetener if you choose.
I haven’t tested it with any other sweeteners because I don't eat sugar so I can’t say for sure how it will go. But, it should be fine.

Make sure the dough is like dough, it should not be liquid or cake batter like. If it is, add a tablespoon of coconut flour to it until it becomes dough like.

Ingredients
2/3 cup Coconut Flour
1/3 cup Almond Flour
1/4 tsp Baking Soda
1 cup Peanut Butter, no added sugars
2 Tbsp Butter
1/2 cup Pure Honey
1 tsp Pure Vanilla Extract
1 Egg
1 cup Dark Chocolate Chips, sweetened with dates
Instructions
Preheat the oven to 350 degrees
Line a large baking sheet with parchment paper
Combine the coconut flour, almond flour, and baking soda in a medium mixing bowl
Cream the butter and peanut butter together, then mix in the honey and vanilla.
Beat the egg in a small bowl then blend it into the dry mixture.
Add the peanut butter mixture into the dry mixture with the egg added. Blend well.Â
The result as you mix it all together, should form dough. It will look just like cookie dough.
If it is too wet, then add 1 tbsp of coconut flour to it until it turns into dough. Don’t make it crumbly though, it should be rolled into a ball and be moist.
Mix in the chocolate chips until they are evenly distributed.Â
Using a cookie scoop, scoop balls onto your parchment paper lined cookie sheet.Â
Flatten the cookie dough balls with the palm of your clean hand.Â
Using a large eating fork, press the fork marks into the top of each flattened cookie. The fork should not stick. If it does, then spray it with cooking spray or dab melted butter onto the top of each cookie.
Bake for 10 mins and remove immediately to cookie racks for cooling.Â
Store in an airtight container for up to 3 days.
