Ingredients
- 1 cup of no-sugar peanut butter, I use one from Whole Foods 365 but Target has a version also
- 1/4 cup of pure honey
- 2 Tbsp of softened butter, I use Kerrygold Irish Butter
- 1/4 tsp of baking soda
- 1/4 cup of very fine almond flour
- 1/4 cup of coconut flour
- 1 egg
Instructions
- Preheat the oven to 350 degrees
- Line a large baking sheet with parchment paper
- Cream the butter and peanut butter together in a medium sized bowl, you can use a hand mixer here if you’d prefer
- Mix in the baking soda, almond flour, and coconut flour
- Lightly beat the egg in a large bowl
- Combine the cookie mixture with the egg in the larger bowl
- Beat mixture lightly with a hand mixer to fully blend in the egg
- Use a cookie scoop or teaspoons to drop the balls of cookie dough onto the lined baking sheet
- Bake for 10 minutes
- Remove to cooling racks
