I eat 4 cage free eggs, which is roughly 28 grams of protein. Protein is critical for your body, your cells need it to perform all their important functions.

Each egg is roughly 7 grams of protein.

Protein helps you retain and gain muscle. 

A lot of people shoot for 1 - 1.5 grams of protein per pound of body weight. I like those numbers and have tested it out personally.

If you lift weights consistently, you will want to work up to the higher end of the range. If not, then you’ll probably feel very comfortable at the lower range.

I recommend you start working your way towards that goal and begin noting how different you feel. 

You should see your cravings reduce, even your snacking and overall hunger. 

Also, you will begin retaining your existing muscle muss. This is vitally important as we get older. 

What are Scrambled Eggs

Scrambled eggs are typically a breakfast meal, but can be enjoyed any time of the day. 

I love breakfast for dinner!

The eggs are whisked, or beaten together in a bowl then fried in oil or butter over medium heat. 

A lot of people will add milk to the eggs, I use water to thin out the mixture. I like the texture and fluffiness without the lactose or added calories. 

Not everyone likes or eats dairy products, like milk.

How to Make Scrambled Eggs

Ingredients

Eggs - I use brown cage free eggs, I want my chickens to be happy and roaming in their natural environment. I also want the chickens to be fed good food. Happy chickens make healthy eggs. 

Butter - I use Kerrygold Irish butter because I love the taste. You could use a lactose free butter, or even a butter that has been cultured. All great choices. 

Water - I use water from the tap. That sounds funny as I type it. Use filtered water if possible. You could even use milk. I have not tried alternative milks, so I don’t know how they would turn out, but I suspect they would be fine. 

Directions

Begin by preheating a small frying pan over medium heat. I use one by All Clad, because it is fool proof. It’s non-stick and performs very well. 

In a small mixing bowl, crack 4 eggs and whisk them well together. 

Add 1 tablespoon of butter to the pan.

Add ¼ water or milk to the whisked eggs and blend well together. 

Once the butter has melted, pick up the pan and tilt it in all directions until the butter is evenly coats the entire base and lower sides of the frying pan.

Add the egg mixture. 

Let the eggs begin to set up, 1-3 minutes. Then, with a spatula begin scraping the bottoms and sides of the pan to scramble the eggs into small egg curds. 

Continue scrambling the eggs until they have fully come together and are no longer runny, or wet looking. They will appear perfectly, yellow, fluffy, and moist. 

This entire process should take around 5 minutes. Keep your eye on the eggs so they do not brown. 

Remove them from the heat and enjoy.

Tips for Making the Best Scrambled Eggs

Don’t skip using enough fat, like butter or oil. Eggs need fat to set up nicely.

Do not walk away from the stove, keep your eyes on the eggs. They cook quickly.

Always add water or milk to get a fluffy delicious egg curd.

How to Store Scrambled Eggs

You can store cooked and fully cooled scrambled eggs in the refrigerator for 3 days in an airtight container. 

I wouldn’t store scrambled eggs personally, but they will hold up for a few days. 

Reheating Instructions

You can microwave them starting at 20 seconds in a microwave safe dish, but the microwave gives food a rubbery like feel. 

You also could put them in a freezer bag and lay them in hot water until the water warms the eggs in the bag. This is similar to a sous vide method. This takes around 7 minutes. 

I can cook fresh eggs in around 5 mins, so at that point I’d make fresh eggs. 

What to Serve with Scrambled Eggs

Any breakfast food you like to eat, including bacon, sausage, toast, avocado toast, fruit, or even pastries. 

I eat mine with a small banana and collagen coffee, every single day of the week.

Ingredients

4 eggs

1 tbsp butter

1/4 cup water, or milk


Instructions

Gather your cooking equipment, a small frying pan, small mixing bowl (and another to eat it with afterward), a butter knife, and 2 forks. 

 

Place a small frying pan on the stove and turn the heat to medium.

 

Add 1 tbsp of butter to the pan to begin melting. Having enough fat in the pan is very important to cooking the eggs perfectly.

 

While the butter melts, crack 4 eggs into the small mixing bowl and whisk well together. I use a fork to mix my eggs well, but you could use an actual whisk. This is your preference. 

 

Then add in the ¼ cup of water or milk and whisk it well together.

 

Pick up the pan and distribute the butter evenly around the bottom and lower edges of the pan by swirling it in your hand. 

 

Pour the egg mixture over the evenly distributed butter. 

 

Let the mixture start to set up. Usually takes 1-3 minutes. Keep peeking at it. 

 

**I begin grabbing my packed lunch out of the fridge and getting it into my work bag here. Plus I get my Keurig going to make my collagen coffee. 

 

Once the eggs begin to set up, start stirring them in the pan with a spatula. Scrape the bottom and the sides to keep the eggs together. 

 

As they start setting up more and more, continue stirring them until they have fully come together and are no longer runny or super shiny. 

 

They will look like fluffy and yellow, curds of scrambled eggs. This process will take less than 5 minutes. 

 

Be careful not to walk away, or stop stirring them. They can dry out quickly and begin to brown. 

 

Remove them from the heat and enjoy them.
