I couldn’t even wait for this yogurt bark recipe to finish freezing. It looks amazing to my eyeballs! I grabbed a small bowl and figured it wouldn’t hurt anybody if I took one little piece while I was waiting.
Waiting, waiting, waiting! This yogurt bark recipe does take some time to freeze all the way through. If you love it like I do, I recommend making another pan of it before the other one runs out. That way you won’t have to wait!
The piece I took was like fro-yo, almost totally frozen through but kinda like soft serve ice cream topped with the sweetest, crunchiest, nut-iest granola, rich dark chocolate chips, and slightly tart berries. It was a fantastic preview!
And I was right. Nobody got hurt. Except the photo I was going to take of it when it was done totally freezing, for y’all.

How to Make Yogurt Bark
Ingredients
Berries are a great fruit to use because they are filled with fiber, and are a denser fruit. Less water content overall makes it a perfect choice for this freezer dessert.
Paleo Granola is perfect for those of us that eat gluten free and sugar free. It’s naturally sweetened and blends the ingredients in a way that equals pure deliciousness.
Dark Chocolate - Chocolate Chips sweetened only with dates give the yogurt bark recipe the perfect hint of chocolate flavor. I love these chocolate chips and they don’t have any added sugar. That’s right! No added sugar and no weird sugar substitutes. Even stevia can taste weird sometimes. But, dates are oh so natural!
Directions
First measure out two cups of greek yogurt, I make my own out of organic cream then drip it so it's beyond thick and creamy. It’s the ultimate in flavor, thickness, creaminess, and filled with healthy probiotics.
I make plain greek yogurt and sweeten it with pure honey. Then I mix in pure vanilla extract, the real stuff.
Stir this all up so it’s well blended. The honey and vanilla will give it a slightly honey color, and it will taste incredible.
The next step is to line your sheet pan entirely with parchment paper, which is great to prevent sticking. And let's not kid ourselves, we all love parchment paper because it makes cleaning up a breeze.
Spread your greek yogurt mixture evenly in the sheet pan.
Lastly, sprinkle on your toppings. I love the Paleo granola I use, so I believe deeply that it should coat every square inch of the yogurt bark. But, that’s your call. Then add a few berries, here and there. Finish up with the dark chocolate chips.
Place your creative display of yogurt bark in the freezer and let it freeze overnight. Or, do what I do, just keep checking it. This involves taste testing for levels of frozenness.
Cut it up into pieces, or just break off a frozen chunk when you want to eat it.
If you want to store it in a container in the freezer, be sure to layer parchment paper between each piece.

This yogurt bark recipe needs to be kept in the freezer. If you have a lid for your sheet pan, that works great. If you don’t have a lid but want to keep the other freezer food and flavors off your delicious frozen treat, then you can cut it up into pieces and put it in an airtight container. Be sure to layer parchment paper between each piece to prevent sticking.

Ingredients
2 cups Greek Yogurt (I make homemade thick, creamy greek yogurt)
2/3 cups Paleo Granola (I use Paleonola Vanilla Bean)
1/2 cup of Pure Honey, optional if you use sweetened greek yogurt
1 tsp Pure Vanilla Extract, no sugar added and optional if you use a flavored yogurt
1/3 cup Dark Chocolate Chips (I use the Hu brand, or Human with no added sugar)
Instructions
Line a ¼ sheet pan entirely with parchment paper to prevent sticking.
In a medium mixing bowl, add the greek yogurt. If you’re using plaid greek yogurt, like i do, then mix in the honey and the pure vanilla extract. You don’t have to use as much honey as I do, it’s pretty sweet and my homemade yogurt is packed with probiotics. The probiotics make the flavor more tart.Â
Pour the mixture onto the sheet pan and spread it evenly.
Place your berries around the top, I use them sparingly because although they are beautiful in color, they can be tart.Â
Sprinkle on the granola, I love to cover every square inch.
Sprinkle on the dark chocolate chips.Â
Place in the freezer for 4-8 hours. Once it is fully frozen, remove it from the freezer and cut it quickly into pieces with a sharp knife. It will melt quickly, so get it back in the freezer as soon as you can.Â
