Tips for Making the Best Chicken Thighs
Use a big enough baking dish to ensure there’s about an inch of space between each of the chicken thighs. They need room to cook and crisp up slightly.
Line your baking dish with a large enough sheet of parchment paper to cover the bottom and sides. This prevents sticking and is amazing for quick and easy clean up.
Use olive oil to boost your seasoning and give an extra layer of moistness. The olive oil gives a nice light flavor which works well with chicken thighs.
What to Serve with Chicken Thighs
Anything you want. I mainly eat some kind of fruit, 2+ year aged cheeses, and some easy to digest veggies right now.
A lunch for me typically looks like two small chicken thighs, some cherry tomatoes, and some kind of fruit like strawberries. I also grab a small no-grain, no-sugar, peanut butter cookie to ward off sugar craving too.
Chicken thighs are so flavorful, they go great in chinese dishes and casseroles too.

Ingredients
- 6 boneless, skinless chicken thighs, about 1.5 lbs
- 1 tsp paprika
- 1 tsp garlic granules
- 1 tsp onion powder
- 1–2 Tbsp Mexican Seasoning Blend
- 1/4 cup olive oil
Instructions
- Preheat the oven to 400 degrees
- Line a 9 X 13 glass dish with parchment paper, bottom and all sides
- Add the chicken thighs, spaced about 1 inch apart
- Sprinkle the suggested seasonings liberally across all of the chicken thighs, onion, garlic, paprika, then Mexican Seasoning Blend
- Drizzle the olive oil evenly across all chicken thighs
- Bake for 45 minutes, times may vary based on your preference and your oven
Notes
I bake for longer than 45 mins. If the chicken thighs are still a tiny bit frozen, I add them to the oven as it’s preheating then I cook them for 60 mins total. I love a little crisp! So, it’s up to you to decide how you love your chicken.Â
